My old ITC Honda presented the same dilemma.  A/C cars had the condenser beside the radiator; non-A/C cars had a bolted-in block-off plate.  I just took the plate off one of my non A/C parts cars and put it on the race car.  The sourcing of the air was not a problem, because it originally came from the left-side headlight surround.
